I've been way behind on posting here. Not because I've been doing nothing, but because I've been doing too much. I drove to MS with Wee-Teen and Pre-Man for Wee-Teen to meet the TX grandparents and go back to TX and stay a week. The following weekend, I drove BACK to MS to pick up Wee-Teen and bring her home. This weekend was a big SCA dance event, hosted by our local group, so I have been helping with that and today is Father's Day.
I made the peach preserves on a Wednesday night. They had to be done before I left Saturday morning to meet my dad and his wife in MS to bring Wee-Teen home. The preserves were part of my dad's birthday gift (along with a jar of the diced peaches we canned at Sheri's and fresh peaches - all in a cute little basket with a red and white checkered cloth and a napkin - sorry, no pics). After canning preserves, I made a batch of pierogi filling - ground venison cooking with garlic and sage. (I added chopped Granny Smith apple at Sheri's and then threw it in the food processor. Absolutely brilliant!)
On Thursday, Thelma and I went to Sheri's and made pierogis with Barb and Sheri. Sheri showed us how to make the dough
and we used a pierogi maker - the plastic thing with the holes. You placed a sheet of dough over the form, gently pressed in the holes so the dough was indented, added your filling, placed another sheet of dough over the filling, rolled it with the rolling pin, and then separated the pierogis.
That's Barb in the background, making dough. Barb also made a ton of fillings...
I'm not sure which one this is. Maybe beef and onion? She also made a mashed potato filling.
We then parboiled them and let them cool.
We froze some of them
and ate a lot of them with a cream sauce.
Thanks, Sheri, Barb, and Thelma, for a delicious day! I'm making more this week!
